Just made these for the first time, but made one modification. I used half hard red wheat and half steel cut oat groats. Delicious flavor - thin, but perfect pancakes. My three picky children loved them.

THis post gives a good explanation of the types of wheat:
http://foodstoragemadeeasy.net/2009/05/13/types-of-wheat/
Wheat kernels just means the actual pieces of grain. Like a corn kernel.
Wheat berries are made by simply boiling wheat kernels. Hope that helps!
We go over wheat some on our step 5 page as well:
http://foodstoragemadeeasy.net/babysteps/step-5-grains/ Hope that helps!

I am new to this... could you tell me the difference btween wheats?? I have purchased both hard winter red wheat and hard winter white wheat. I have yet to use them and need some info on how to do so.

When you say add kernels .. what actually do you mean? Also can I make wheatberries from my stock or is that something I need to buy separately?

I am looking forward to beginning some wheat preparation this summer when I am off from work. Hoping you could enlighten me on what we are really using from the wheat and what kind when we cook. I would appreciate an article on wheat. Thanks!

My pancake batter made 6 very large pancakes. I had two problems with the batter - actually three....One, using a Vitamix Blender (which is really powerful) the batter turned into bread dough by 4 minutes. I had to add another cup of water and another 3 tablespoons of milk powder. Then the batter was fine and I had to let the mixture cool a bit before adding the eggs as the mixer actually "cooks" foods. So for people with a Vitamix, please do not go past one to two minutes, or do as I did and add another cup of water and three more tablespoons of powdered milk. Problem two: This is an altitude problem I'm sure. I live in San Antonio, Texas. I had to add two more teaspoons of baking powder to the batter because the pancakes were way too thin (and I love thin pancakes.) On to problem three: OK...for the salt. I used Kosher Salt and felt that 1 1/2 teaspoons was not enough and I added 1/2 teaspoon more. That was too much. If I had used 1 1/2 teaspoons of regular table salt, it would have been too salty. (You can double the amount of Kosher salt to = the amount in a recipe for table salt usually.) So I feel that 1 to 1 1/2 teaspoons of Kosher salt is the correct amount for us, but I would have ruined the batter with table salt.

I was so pleased with this batter, and so excited using the wheat kernels. Whenever I use the wheat kernels I smile!

I think it made enough to feed 2 adults, 2 kids, and have some leftovers. I can't remember exact numbers, sorry!

Sounds yummy with those additions. I am afraid I am a bit of a salt-lover so they didn't seem too salty to me!
