Jodi,<br>Thank you for this recipe! We have been eating flat little bricks for the last month trying all kinds of different recipes until I noticed something about your recipe that I had not seen anywhere else...there's only ONE RISE! I only use INSTANT YEAST that I pick up at Costco and I have rarely been successful with the majority of recipes I've followed because, I believe, they've always stressed the punching down and 2nd rise. I think it may be one of the perks of instant yeast that you can skip the 1st rise and punch down. Anyway, the loaf baked up perfectly, and I waited a whole 15 minutes before diving into it...crumb and taste were outstanding. Everyone, try this recipe! The only change I made was that I kneaded about 15-18 minutes until my dough passed the "window-pane" test.

This Honey Whole Wheat Bread looks great. Can't wait to try it. I was wondering if you have an on-line recipe file that I could download and browse through for ideas? It would be nice to have a food storage recipe file to help aid in ideas for cooking.

Thank you,

Jeff

If we are storing our own grains, how do we make all-purpose flour? What is the ratio of hard wheat to soft wheat?
