		<description>Healthy eating is not so hard for me since I enjoy the food and how it makes me feel. I made oatmeal for breakfast, had scrambled egg substitute (I freeze several cartons of eggbeaters), V-8 juice. Lunch was leftovers from Sunday Dinner. For dinner we had pinto beans that I had put in the crockpot before I left for work this morning. I highly recomend using the slow cooker, it is nice coming home to a meal ready to eat. We put some seasonings in the beans and ate them with wheat bread. Yummy and good for you too!</description>

		<description>This was no problem for my family, we usually eat really health anyway. We juice a lot of fruit and vegies during the day to get in our daily amounts. I found it hard the first day eating out of our 72 hr kits, I did not realize how much I would miss eating healthy.</description>

		<description>Low salt &amp; low fat has been my life for the last 5 yrs.  What has been hard for the last 3 months is lowering my sugar.  I have switched to aspertain &amp; it is helping some.  I still get cravings for cholocate and ice cream, esp cholocate ice cream.  I work full time &amp; my husband is retired.  Evening meals tend to be something quick to eat, ecp on my days off.  Than I try to make a large meal &amp; put some up in the freezer to take to work.  I have not bought anything since this has started &amp; we still have a good supply with lots of choices.  I have replaced the water I have used &amp; added more.  I found an extra item to store water.  I have several camping insulated bottles for any for of liquids.  I placed water in these along with all my empty canning jars.  Thank for the suggestion.  This has shone me what I need to improve on.</description>

		<description>This was an easy day for me, its how I eat normally.  I am also glad we are getting close to soup season again.  Its one of the things about fall and winter that I look forward too.  I like my fresh fruits and veggies when they are in season, but I like when the cycle for soups comes back around too!</description>

		<description>This is an easy challenge for us.  We have been cooking from scratch for a while now to help with health issues.  My mom says that I put to much work into feeding my family.  Everything comes in a box now.  My kids have had more energy and just love to have fresh things from home.  I don&#039;t buy any store bought junk food anymore.  They like the homemade goodies.  Fruit smoothies are a great way to start off the day.  I never thought of sneaking in some spinach.  That is a great idea.  Thanks.</description>

It will be interesting to try and cut out a lot of the fat.  I will have to eat leaner meats for lunch and load up on the salad bar.  You can still eat healthy when you go out!</description>

		<description>My batchler Son was diagnosed diabetic a few months back and Mom had to help him figure out menu&#039;s for a while. &lt;br&gt;&lt;br&gt;I cook nearly all of our meals from scratch. Seldom ever use a packaged anything except cake mixes and that is just for convience. Don&#039;t use a bread making machine either. I learned to make bread in a dishpan and I still do. Can even bake it in an Apple Boxd oven. Beans and Rice are a regular around our house and lentil soup makes a real good lunch. I put veggies in just about everything I cook and keep plenty of dried celery leaves on hand because I use(eat) lots of celery and save all the leaves and dry them myself. Have dried onions, green peppers and carrots too so throw them in everything. We do eat quite a bit of sugar for breakfast as a rule because we like whole wheat pancakes and home made jam or jelly. Also like the french toast made with my homemade bread and dried eggs. Right now we are enjoying all the fresh produce and fruit so we are getting more than 5 servings a day some days that&#039;s about all we eat. Winter time is a different story tho and I do have to watch and make sure I have those things in my storage that wil help me put 5 servings in the menu. Will have lots of squash stored and corn in the freezer which will help. Lots of canned tomatoes and green beans too. So we should be good to go. Oh yes another thing we eat lots of especially in winter is pickled beets and apple sauce. Both home canned of course. :)</description>

		<description>My husband is diabetic, so I know all about storing sugar-free/low fat foods. He has to make sure he gets enough roughage too. We all eat the same foods though. I just make sure that there are treats for those want something sweet. Managed to get my veg/fruit quota today as well.</description>

		<description>Today is my surgery, so except for my regular v-8 fruit juice in the morning, I can&#039;t have anything to eat.  I did make sure to have the menu set up for husband &amp; daughter before I left for hospital.  I&#039;m not sure I&#039;ll be able to eat dinner.  I may be too doped up to remember anything until tomorrow.  However I am really loving these tests.  It really shows my family just how prepared (or unprepared) we really are!</description>
