		<description>We tried this and found it was absolutely delicious.  I did tweek it by adding corn.  Thanks for a great recipe!&lt;br&gt;&lt;br&gt; I didn&#039;t have a can of enchilada sauce and got to wondering what was in it.  I found this recipe that is a hundred times better than any canned sauce, IMO.
