<p>Today, we&#8217;re following up with our 3rd Surprise. <a href="http://foodstoragemadeeasy.net/2011/04/18/surprise-2-2nd-edition-extreme-makeover-for-families-in-need/">The Extreme Food Storage Makeover: Helping Families in Need.</a>  We had 4 main families that were chosen, each having different reasons why this makeover would be great for them. Some were financial, others were just in need of some direction and help.  Since you the readers are the ones who raised the money through a percentage of your purchases at our Shelf Reliance <a href="http://JodiandJulie.ShelfReliance.com/Home">store</a> that month, we thought you&#8217;d like to know how it all turned out. We&#8217;ve already introduced the <a href="http://foodstoragemadeeasy.net/2011/09/07/extreme-food-storage-makeover-the-e-family/">first family</a>, and <a href="http://foodstoragemadeeasy.net/2011/10/03/extreme-makeover-s-family-adopted-high-needs-boys/">second family</a>, and today we&#8217;re introducing the third family. </p>

This family is a family of eight.  Two parents and six children.  The mother,  is very frugal and does a super job at making ends meet.  I know she is always on Food Storage Made Easy site to help her along the way.  Her husband works outside the  home while she takes care of home needs and takes care of the six children.  They are very loving people that like so many people could really use some help with food storage as just attending to everyday meals can be a challenge.</p>
<p>The children range from ages 3-18.  The mom is a very good seamstress and makes some of her children&#8217;s clothing.  I&#8217;m not sure she sees herself that way but the beautiful dresses she has made her oldest for Madrigals and Prom says it all.</p>
<p>They live in the Midwest as her husband found a job here some years ago.  They all miss the beaches as they lived in Florida before moving here.  As we all know you have to go where you  can find employment.</p>
<p>Anyway,  I really would love to see this hard working family win the food storage makeover as they are so deserving.  They are in a challenging financial situation at this time as his job may not be that stable right now.</p>

<p>The folks over at the Wondermill were AMAZING to donate a <a href="http://foodstoragemadeeasy.net/products-we-recommend/grain-mills-wheat-grinders/">Wondermill Electric</a> to one of our families.  We love our Wondermills and find them to be a crucial appliance for using your Food Storage regularly. We know people who are just starting out have other things to buy first, but when the time is right we encourage you to invest in one. </p>
<p>When I spoke with the mom from this family and asked her about her food storage she was so delightful and positive. I asked if she had a way to grind wheat and she said she could borrow a grinder and did that when she could. We felt good about having the Wondermill donate the mill to this family since she was already in the stage of using her wheat. We know when we first started, we would borrow grinders, and it made it harder and kind of annoying. Once we got our own grinders, we started using them every week! </p>

<p>Thank you so much for choosing our family as one of the makeover families!  We have worked so hard on our food storage over the years.  For us, it has been difficult to keep stocked up on the fruits and veggies &#8211; they seem to disappear from the shelves faster than we can stock them!  It feels so nice to go down to our basement and see those Thrive cans there!  We now feel like we have a base to start from.  We are also LOVING our wheat grinder.  I&#8217;m so excited to be able to regularly use all of this wheat that we have stored!  It feels good to know that we can have a healthier, whole-grain diet.  I am on a quest to learn how to make the &#8220;perfect&#8221;  whole wheat bread.  So far, my family&#8217;s favorite thing from our wheat has been pancakes. This is a family that has adopted 3 high needs young boys.  The boys are ages will be 7, 11 and 12.  Mom and Dad have started a large vegtable garden.  Kids are learning about weeding and watering their dinner as well as selecting their favorite veggies and discovering what grows in the area and what does not. <img src='http://foodstoragemadeeasy.net/wp-includes/images/smilies/icon_sad.gif' alt=':-(' class='wp-smiley' />   The garden came about when the youngest, then 6 years old, requested a garden for his birthday present.  The parents could not resist fullfilling this birthday wish.</p>
<p>Both parents work full time and with high needs children everything has to fit in the monthly budget.  Food storage is a goal of this family.  They have downloaded your binder and have been working on babystep #1 for the last 4 months.  Mom was thrilled to get the 3 day emergency food done, and she trys not to look at the rest of the binder and become overwelmed.  She tells herself that she is better prepared today than she was 4 months ago.</p>
<p>This family has hearts to help others.  They are forever assisting those around them and see food storage as a way to assist others in times of emergency.  This family lives on a very tight budget due to the needs of their children.  Emergency room visits and unexpected drama keeps the budget tight. This family has just moved into a house that they have been working towards for 12 years.  They now have the space for food storage.</p>

In speaking with the family, it became quickly apparent that with everything they have to deal with, help getting organized was going to be a life-saver.  Initially we planned to only send food to the families.  When we saw the before pictures, and spoke more with the family about their situation, we knew shelving was going to be just what they needed.  As you can see from this picture their short wall prohibited them from getting some regular shelves.  They didn&#8217;t have the time to build custom shelves.  As a busy family who adopted 3 high needs boys, and both parents work &#8211; we couldn&#8217;t help but help get them organized.  Here&#8217;s a picture story of their shelving makeover.  </p>

<p>This is a letter we received from the family:<br />
Thank you Julie and Jodi. What a difference a little organization can make in a busy life.  With two full time jobs, and two sandwich shops, and three high needs children, food storage was an overwhelming addition to our lives.  Our food was stacked in the upstairs storage room. With it piled on top of each other and in boxes, I couldn&#8217;t keep track of what we had and what we needed.<br />
Enter Julie and Jodi. They understood that if I can&#8217;t see what I have, it&#8217;s like not having it.  They sent my family two shelves from Shelf Reliance.  Putting the shelves together became a family bonding adventure. My boys took great pride in rolling the cans down the racks. <p><strong>About the Family:</strong><br />
I met Cathy through a forum of &#8220;homestead&#8221; type moms.  I always appreciated her tips on how to be more frugal (many of the moms struggle with making ends meet) and more &#8220;natural&#8221;.  One week we were completely out of money, even for groceries, and I was asking for meal ideas for the items I had in my pantry.  Cathy privately messaged me to say that she didn&#8217;t have any money to send or any way to help except to send me a few coupons for free cans of tuna.  And she did. That make such an impact on me&#8230; we&#8217;d never met, and yet this lady who struggles with making ends meet found a way to help me.</p>
<p>Earl, her husband, is in the Army and they are living in Oklahoma.  He has been deployed several times during their marriage.  He&#8217;s missed many of their 5 children&#8217;s birthdays.  Cathy has learned to do it ALL by herself.  Their children are 10, 7, 4, 3, and 1. We did get to meet once a few years ago while she was on her way to see her parents, and we had a lovely 2 days together visiting and letting our kids get to know each other, etc.</p>
<p>She has been such an example to me of a mom that has had to do it all herself, and then adjust back to releasing some of the &#8220;reins&#8221; of responsibility back to her husband when he is back home.  Everything I hear of Earl is that he&#8217;s a godly man and a good husband and daddy.  I&#8217;ve not had the chance to meet him yet.</p>
<p><strong>Why this Family:</strong><br />
Earl and Cathy have been working VERY hard to eliminate debt and with their military pay, it&#8217;s sometimes a struggle for them to just meet day-to-day needs while paying off debt.</p>
<p>Cathy has made preparedness a priority, but I know she has a long way to go with such a big family.  She gardens, has chickens, etc., to supplement their food supply.  She&#8217;s been struggling with  health issues for years &#8211; autoimmune disease, and most recently a diagnosis of cancer (treatable and hopefully curable, but cancer, nonetheless).</p>
<p>Just 2 days ago, they were watching the reports of a huge grass fire that had caused the evacuation of several neighborhoods and destroyed several homes near them.  Earl was gone, and they were ready to evacuate if necessary.  Thankfully, the fires were contained and they were able to stay put.  She knows the importance of being ready to grab kids and supplies and get out of danger living in a fire- and tornado- prone area.</p>

			<content:encoded><![CDATA[<p>Jodi&#8217;s dad is one of the hardest people to win over to the whole wheat camp.  He hates everything that <a href="http://foodstoragemadeeasy.net/extreme-food-storage-makeover/">Grandma Lori</a> makes with whole wheat which makes her a little hesitant to keep cooking with it.  He&#8217;s typically not even willing to try something if he catches on that there might be whole wheat in it.  </p>
<p>So this Thanksgiving we concocted a sneaky plan &#8230;</p>

<p>One is made with 100% <a href="http://foodstoragemadeeasy.net/products-we-recommend/grain-mills-wheat-grinders/">fresh ground</a> whole wheat flour, the other is made with store-bought white flour.  (Hint, white flour is on the left)</p>
<h3>Can You Tell the Difference?</h3>

<p>The whole wheat cake (right) was a little darker.  The white flour cake (left) rose a little higher.  We are thinking we could probably add a little more leavening to the recipe to get the whole wheat to rise equally.</p>
<h3>The Finished Products!</h3>

<p>Our beautiful cakes were a hit at our Thanksgiving party at our Aunt Irene&#8217;s house, even though we somehow ended up with about 8 different desserts there.  Gotta love Thanksgiving!</p>
<h3>The Results???</h3>
<p>Jodi made sure to serve up a slice of the WHOLE WHEAT CAKE to her dad.  He commented that the cake was really delicious.  We asked him if it tasted different and he said no.  He wasn&#8217;t too happy when we gleefully told him it was made with whole wheat flour.  Everyone else in the family raved over it too.  This is a family favorite recipe so they would have known if something was off.  We both tested a small piece of each of the cakes and felt like we could MAYBE taste a slight difference but if we weren&#8217;t eating them side by side you would NEVER know.  Yay!  </p>
<h3>The Pumpkin Cake Recipe</h3>
<p>Ingredients:<br />
4 eggs<br />
1 2/3 c. sugar<br />
1 c. cooking oil<br />
1 large can pumpkin<br />
2 c. flour (whole wheat works GREAT)<br />
2 tsp. baking powder<br />
2 tsp. cinnamon<br />
1 tsp salt<br />
1 tsp. soda</p>
<p>Frosting:<br />
6 oz. cream cheese<br />
3/4 c. butter<br />
1 1/2 tsp. vanilla<br />
3 c. powdered sugar</p>
<p>Directions:<br />
Preheat oven to 350°.  Beat eggs, sugar, oil, and pumpkin.  Stir in dry ingredients.  Mix well. Bake for 30-35 minutes in a 9&#215;13 ungreased pan.  Mix together frosting ingredients and pour on top.  EAT AND ENJOY!</p>

<p>We&#8217;ve been so busy with the Seven Day Challenge, One Second After group book discussion, and the Thanksgiving holiday, that we haven&#8217;t done a segment in our <a href="http://foodstoragemadeeasy.net/extreme-food-storage-makeover/">Food Storage Makeover</a> series for a few months.  Today Jodi shows Grandma Lori how to convert her favorite homemade chicken noodle soup recipe into a fabulous food storage recipe that is easier, faster, healthier, and just as delicious!</p>

<h3>Homemade Chicken Noodle Soup Recipe &#8211; food storage style</h3>
<p><b>Soup</b><br />
3 large chicken breasts<br />
1/2 c. dehydrated celery<br />
1/3 c. dehydrated onions<br />
1/4 c. dehydrated carrots<br />
9 cups of water<br />
1 tsp. garlic salt<br />
1 tsp. parsley<br />
salt and pepper to taste</p>
<p><b>Noodles</b><br />
2 cups whole wheat flour<br />
2 eggs<br />
1 tsp. salt<br />
1/4-1/2 c. water</p>
<p><b>Directions</b><br />
Add all ingredients into a pressure cooker.  Cook according to your pressure cooker&#8217;s directions for chicken breasts.  Using the <a href="http://foodstoragemadeeasy.net/products-we-recommend/pressure-cookers-canners/">Cuisinart Electric Pressure Cooker</a> this was 15 minutes on high pressure (we used frozen chicken breasts).  While the chicken cooks, prepare noodles.  Knead for 5-10 minutes in a mixer with dough hooks.  Roll out to about 1/8 inch thick.  Cut with a pizza cutter into 1/4 inch strips about 3 inches long.  Separate the noodles and let dry out a little bit.  When chicken is done cooking, remove and cut into bite-sized pieces.  While cutting, set your pressure cooker to a browning setting and throw in the noodles to cook.  Add the cut up chicken back in and cook until noodles are soft.  ENJOY!</p>
<p><b>VARIATIONS</b><br />
One of my favorite things to do is make a batch of this soup without the noodles.  Then I make a big batch of brown rice in the pressure cooker.  I separate the rice into lunch-size portions and put the soup in a large tupperware.  Every day I mix a  little bowl of soup with rice added in and it is a delicious, healthy, low-fat, quick, easy lunch for me!</p>
<p>Another favorite family recipe made easier and faster using food storage is Chicken Tortellini Soup.  The basic soup is very similar to the above recipe.  I&#8217;ll share my tricks on that one another day!</p>
