Cowboy Caviar (Meal-in-a-Jar)

I’m so excited to introduce this month’s meal in a jar recipe. I used to do these recipes on my Thrive blog but in light of Thrive Life shutting its doors to consumer sales I’ve decided to continue the series here at Food Storage Made Easy. (FYI there is still a little bit of food left at Thrive if you want to grab it!)

If you follow me on InstaGram you may have seen my video about a NEW BEAN BUCKET that just hit my online store and I decided for this month I would make the meal in a jar recipe based off of items from the bucket! I’m exited to introduce you to these AMAZING beans and this delicious Cowboy Caviar recipe!

Jar Ingredients:

1/2 tsp. Garlic Powder
1/2 tsp. Salt
1/4 tsp. Pepper
1/2 tsp. Cumin
1 T. White Sugar
2 T. Freeze-Dried Green Chili Peppers
1/4 c. Freeze-Dried Chopped Onions
3/4 c. Freeze-Dried Sweet Corn
3/4 c. Freeze-Dried Red Peppers
1/2 c. Instant Black Beans
1/2 c. Instant Red Beans
1/2 c. Instant Pinto Beans

Dressing Ingredients (for preparation):

1/4 c. Olive Oil
1/3 c. White Vinegar

Directions:

To make jar: Add all ingredients to a quart-sized jar in order listed. Add an oxygen absorber or seal with a foodsaver jar lid attachment.

To prepare: Bring 2 1/4 c. water to a boil. Add contents of jar and stir. Remove from heat and let stand 5-7 minutes or until beans are softened. Add dressing ingredients and refrigerate 4 hours or overnight. Eat with tortilla chips or as a side on its own. So much yummmmm!
