Cooking Demo Replay – Cooking with Beans!
Taco Bell Copycat Mexican Pizza Recipe
Ingredients:
- 1 c. Freeze-Dried Beef (reconstituted with a little extra water)
- 1 T. Taco Seasoning
- 1 c. Instant Refried Beans (reconstituted with 3/4 c. water)
- 10 oz enchilada sauce
- 1/4 cup diced tomatoes
- 1 1/2 cup shredded Mexican Cheese
- 1/4 Freeze-Dried Green Onions (optional)
- 6-8 Tortillas (flour or corn)
- 1 T. vegetable oil
Directions:
Prepare your taco meat (or use leftover taco meat). Rehydrate your instant refried beans. Heat oil in a frying pan a bit at a time and toast up your tortillas so they are slightly crispy on each side.
Spread beans over one tortilla, sprinkle beef on top. Top with a second tortilla. Spoon 2 Tablespoons of enchilada sauce over top of the tortilla. Dump on a handful of Mexican cheese and top with diced tomatoes and sprinkle with freeze-dried green onions. You could get really crazy and add olives too if you like.
Bake for 8-10 minutes at 400 degrees or until cheese is all melty and delicious. Top with sour cream, salsa, guacamole, etc. ENJOY!
Brazilian Black Beans
Original recipe can be found here when we were first learning to cook with beans!
–> Brazilian Black Beans InstantPot Recipe
Ingredients:
- 1 c. Instant Black Beans
- 1/4 c. Freeze Dried Sausage
- 2 pieces of Bacon, diced
- 1/4 c. Freeze-Dried Green Pepper
- 1/4 c. Freeze-Dried Onions
- Salt and Pepper, to taste
- 1 1/4 water (to hydrate)
- 1 T. Oil
Directions:
Saute bacon until cooked all the way. Add dry sausage, green pepper, and onion to the pan and slightly brown them. Stir in the instant beans and add 1 1/4 cups of boiling water. Let stand for about 7 minutes or until beans are softened. Add salt and pepper to taste. Seasoned salt would be delicious!
Instant Rice and Beans Buckets

These beans have gone through a proprietary process where they are cooked and dried and prepared for long term storage. When rehydrated, they are similar to a fresh can of beans you purchase at the grocery store but with none of the nasty additives!
When paired with instant rice this combo makes a complete protein and an ideal low-fat option in an emergency. 3 varieties of buckets available.
Damsel in Defense – Personal Safety Products
As mentioned in the show I’m sending my daughter off to college in Philadelphia next week and my mama heart is feeling pretty anxious about it. I got her some personal safety items so at least I know she will be somewhat prepared. I will also be working on a small college 72 hour kit for her like I did for my son when he left for school.
We filmed an unboxing of her taking a look at the items that I will share later so you can see her cute reactions. Here are the items I felt were important for her to have:
- Pepper Slay – She giggled when she saw the bedazzled pepper spray. I love it!
- Sock It Slim – She thought this was to break car glass, oh no hunny, it’s to jab someone with!
- Breakaway Baby Keychain Lanyard – For easy access to her tools attached to her backpack.
- Blaire Necklace – Loud whistle that doubles as a pretty necklace. She felt like this would make her feel safe but is not obviously a safety product
As I learn more about the Damsel products I may send a few more things her way but at least this way I can feel a letter better about her roaming around campus on her own in a big city. Why do our children have to grow up???
