Banana Split Energy Balls (Raw/Vegan/Deliciousness)

Fruit and Vegetable Recipes, Recipes
You may have seen in a few recipe posts, that I've been working towards eating a more raw vegan diet lately. It's a work in progress and I succeed about 85% of the time I'd say :) I definitely try to minimize animal products and keep the rest of my diet consisting of whole foods including lots of fruits and vegetables. It's not always easy to have healthy fresh fruits and veggies on hand every day, so I've been super grateful for my food storage foods (which I always keep upstairs for everyday use anyway) while I've been adjusting to this new way of eating. Sometimes I miss being able to have a yummy treat to just pop in my mouth when I need a little afternoon pick-me-up. Enter this…

Food Storage Carrot Cake

Fruit and Vegetable Recipes, Recipes
My best friend LOVES carrot cake, so of course I had to make her a homemade carrot cake to celebrate her birthday! I went to my go-to source for delicious recipes and Our Best Bites did not fail me. Their Carrot Cake Supreme Recipe looked simply A-MAZING so I knew that was what I should make. By a remarkable twist of fate I even had every single ingredient on hand to make the recipe ... besides the CARROTS. Now normally when we make a recipe and do food storage substitutions we only swap out one ingredient at a time so if it fails we can isolate what the problem was. This recipe had so many potential things I could have swapped for but I decided to JUST stick with the…

Rhubarb Crumb Coffee Cake Recipe

Fruit and Vegetable Recipes, Gardening
Sometimes I forget to check on my rhubarb ... I didn't quite realize that it would be ready to harvest in the spring, because I harvested a bunch last fall. Rhubarb is a beautiful thing! So the other day I went out and got a HUGE batch out of my garden. We were having a family dinner and I knew that I would be searching for an awesome rhubarb recipe to bring for dessert. I settled for a Rhubarb Coffee Cake recipe that was recommend by The Pioneer Woman since she never leads me astray. It was just the perfect combination of cake, fruit, and crumble. I took all the leftovers home and ate them for days. Recipe adapted from Smitten Kitchen which was adapted from New York Times recipe…

Fall Desserts: Apple Crisp

Fruit and Vegetable Recipes
Fall is in the air. I LOVE IT! The cool crisp nights. The fall produce. Soups become the go-to meals. It's the best. What better fall dessert is there than some warm apple crisp. The other day my sister sent me a text and said "I'm craving apple crisp - but I don't have all the ingredients to make it". Of course I didn't mention if she had food storage she wouldn't have that problem. Instead I made a delicious pan of apple crisp (using her favorite recipe) and texted her a picture of it. Aren't sisters the best? If she didn't live a few states away I would have invited her over for some too (I'm not that mean). So here's my sister's favorite apple crisp recipe (that she…

CREAMY POTATO SOUP (Food Storage and Fat-Free Style)

Bean Recipes, Fruit and Vegetable Recipes, Recipes
When I got married, my mother-in-law (Jodi's mom - known as Grandma Lori around here) gave me a very special gift. She had each of my relatives and close friends fill out a recipe card or two of their favorite, most trusted recipes. I LOVE that little box of recipe cards because it contains a lot of family favorites that my husband and I both grew up loving from our aunts, grandparents etc. One of my go-to recipes out of that box has been my Aunt Debbie's Vegetable Cheese Chowder (We call it Creamy Potato Soup). Over the years I've figured out a way to incorporate my food storage into this soup AND make it virtually fat free!. Through some creative cooking techniques (removing the flour, milk, and butter) I…

Fruit and Vegetable Recipes, Gardening, Recipes
Did you recently pull up the last of your vegetable garden? Do you have bags of tomatoes and peppers all over your kitchen? What do you do with a "problem" like this? Here in Utah the first frost is around the corner, so I've been grabbing everything off of my plants as quickly as possible. The pepper plants have been pulled up after getting lots of great green and red peppers, and jalapenos too. My tomatoes still have some greenies on the vine so I'm holding out hope that I can squeak a few more good ones out. Needless to say I have an abundance of produce hanging around my kitchen. Spaghetti Salad Ingredients: 16 oz package of spaghetti 1 large green pepper, seeded and chopped 3-4 medium tomatoes, chopped…

Recipe: Mexican Casserole – Food Storage Style

Bean Recipes, Fruit and Vegetable Recipes, Pasta Recipes, Powdered Cheese Recipes
This recipe is a family favorite of my husbands- they call it Cowboy Delight. He asked me to make it one day, but I had no Kraft Macaroni and Cheese. A few weeks ago, I had bought some powdered cheese blend in a #10 can to give a try one day and had forgotten about it. Well - I figured this would definitely be a good recipe to try the cheese in since it was mixed with so many other things. It turned out fabulously. Cowboy Delight - Mexican Casserole Ingredients: 1 family size package Kraft macaroni and cheese (I used 3 C macaroni, 1/2 C powdered cheese, 6 tsp butter, 6 tsp of powdered milk) ½ lb. lean hamburger browned (use freeze-dried ground beef) ½ onion, chopped (can use…

Homemade Applesauce Recipe & Canning

Canning, Fruit and Vegetable Recipes, Fruits and Vegetables, Jodi's Progress
My wonderful cousin Kaila got about 500 pounds of apples off the tree at her new house and was kind enough to give some to me. Since the apples were free and readily available I decided to attempt to make some applesauce. It was messy but a really fun family affair! Homemade Applesauce Recipe and Canning Instructions Step 1: Get your pot ready I used my biggest pot and put a little water in the bottom to keep the apples from sticking. As I peeled the apples I just started throwing them in to start cooking. Step 2: Peel a TON of apples I used my handy dandy apple peeler which the kids thought was WAY fun to help with. If you don't have one of these peelers, you can…
